Blueberry Pineapple Salad

What You Need

2 cups large, fresh blueberries
2 cups pineapple chunks, drained
1 cup mandarin oranges, drained
½ cup whole, blanched almonds
½ cup pineapple juice
½ cup orange juice
2 tbsp sugar
1 tsp cornstarch


Directions:

1) Mix the juices, sugar and cornstarch cold. Then bring to a boil until it begins to thicken (1-2 minutes) and remove from heat. Cool.


2) Pour over fruit mixture and toss.
